Wait… blender or food processor?
So here’s the deal: these are technically blender waffles, but I highly recommend using a food processor (or even a mini food chopper) fitted with an S-blade. The batter is thick, and most blenders struggle to blend it evenly without stopping to scrape the sides every 30 seconds.
If you're using oat flour instead of whole oats (see my tips below), you can totally get away with a stick blender.
Key ingredients

- Ripe bananas: The more spotty, the better. They naturally sweeten the waffles and help bind the batter. If yours aren’t quite ripe enough, add a splash of maple syrup to balance it out.
- Oats: Quick oats blend down faster, but honestly, any oats you’ve got will work here. Use certified gluten-free oats if needed. You’re turning them into oat flour anyway.
- Protein powder: Use your fave! I’ve only tested this with pea protein–based powders (my go-to is Mrs Flury's vanilla protein–use ELO10 for 10% off). I can’t say how whey protein will behave, but based on my food technology knowledge, it should be fine.
Elo's tips
- Blend the oats first before adding the rest. It gives you a finer, smoother batter.
- Do you have oat flour at home? Even better. Skip the blending step and go straight in with the rest.
- Grease that waffle iron! These waffles don’t have any added oil, so even the best non-stick iron might need a little extra help. Use spray oil or a paper towel dipped in melted coconut oil. Re-grease between batches.
Step-by-step instructions

- Make oat flour: Add the oats to your food processor and blend until finely ground.

- Blend: Add in the rest of the ingredients and blend until combined. Expect the batter to be thick, that’s normal!

- Bake: Scoop 2 heaping tablespoons of batter per waffle square. Close and cook for approximately 3 minutes or until golden (depending on your waffle iron).

- Cool: Carefully remove the waffles from the waffle iron with two forks and place them on a rack to cool.
Meal prep & freezing tips

Prep a double (or triple!) batch of waffles and freeze them for later.
Once cooled, add them to a zip bag and press out as much air as you can. Don't forget to label them and add the date. You can freeze them for 8-12 weeks.
Reheat in the toaster once for a soft and warm waffle, or twice if you love a crispier edge.
The recipe

Blender Banana Protein Waffles
Ingredients
- ¾ cup (80 g) oats or use oat flour, gluten-free if needed
- 1 medium banana
- ¼ cup (25 g) plant-based vanilla protein powder see notes
- ½ cup (120 ml) plant-based milk of choice
- 1 teaspoon baking powder
- ½ teaspoon vanilla extract optional
- ⅛ teaspoon salt
- Baking spray or coconut oil to grease the waffle iron
Instructions
- Preheat: Turn on your waffle iron while you prep the batter.
Grind the oats: Add oats to a food processor or chopper and blend into a fine flour.
Blend batter: Add banana, protein powder, plant milk, baking powder, vanilla (if using), and salt. Blend until smooth — the batter will be thick.
Bake: Grease the waffle iron with a baking spray or coconut oil on a paper towel. Spoon in 2 heaped tablespoons of batter per waffle square and cook for 3 minutes or until golden.
Cool: Transfer waffles to a wire rack to cool completely or serve them warm.
Freeze (optional): Let them cool, then pop them into a zip bag, pressing out as much air as possible for freezer storage. You can defrost them in the toaster.
Notes
- I use Mrs Flury's protein powder (ELO10 for 10% off), which is great for baking if you’re based in Europe or Switzerland. Alternatively, use another pea protein-based protein powder.
- These waffles don’t have any added oil, so even the best non-stick iron might need a little extra help. Use spray oil or a paper towel dipped in melted coconut oil to grease your waffle iron. Re-grease between batches if needed.

Who knew blending oats and a spotty banana could make me *this* happy? Elos recipe is a lifesaver – perfect for those days when my willpower hits rock bottom. The protein powder is a genius idea, keeps you feeling less like a snack and more like... well, a protein-packed breakfast! Just wish I had a waffle iron that loved me back as much as these sound. Definitely trying the freezing trick – my future self will thank me (and me for not making waffles from scratch every single morning)! Thanks, Elo, for keeping our blenders busy and bellies full! 🍌🥞💪
