Blender Banana Protein Waffles

These blender banana waffles boosted with plant-based protein powder are perfect for meal prep, freezer-friendly, and easy to reheat in the toaster!

Ingredients
 

  • ¾ cup (80 g) oats or use oat flour, gluten-free if needed
  • 1 medium banana
  • ¼ cup (25 g) plant-based vanilla protein powder see notes
  • ½ cup (120 ml) plant-based milk of choice
  • 1 teaspoon baking powder
  • ½ teaspoon vanilla extract optional
  • teaspoon salt
  • Baking spray or coconut oil to grease the waffle iron

Instructions
 

  • Preheat: Turn on your waffle iron while you prep the batter.
  • Flour-like powder in a small food processor.
    Grind the oats: Add oats to a food processor or chopper and blend into a fine flour.
  • Light brown batter in a small food processor.
    Blend batter: Add banana, protein powder, plant milk, baking powder, vanilla (if using), and salt. Blend until smooth — the batter will be thick.
  • Hand scooping batter onto a waffle iron.
    Bake: Grease the waffle iron with a baking spray or coconut oil on a paper towel. Spoon in 2 heaped tablespoons of batter per waffle square and cook for 3 minutes or until golden.
  • Two sqaure waffles in a waffle iron.
    Cool: Transfer waffles to a wire rack to cool completely or serve them warm.
  • Two waffes in a plastic zip bag with a handwritten label.
    Freeze (optional): Let them cool, then pop them into a zip bag, pressing out as much air as possible for freezer storage. You can defrost them in the toaster.

Notes

  1. I use Mrs Flury's protein powder (ELO10 for 10% off), which is great for baking if you’re based in Europe or Switzerland. Alternatively, use another pea protein-based protein powder.
  2. These waffles don’t have any added oil, so even the best non-stick iron might need a little extra help. Use spray oil or a paper towel dipped in melted coconut oil to grease your waffle iron. Re-grease between batches if needed.
