Easy Energy Balls With Dates

This easy energy balls recipe made with Medjool dates, oats, and almonds is one you want to save to make again and again. It's the perfect mid-day snack that gives you an extra boost of energy.

Ingredients
 

  • ½ cup (80 g) raw almonds
  • 6 (130 g) pitted Medjool dates
  • 1 cup (110 g) rolled oats
  • 3 tablespoons 100% pure almond butter
  • 1 teaspoon cinnamon
  • ½ teaspoon vanilla extract
  • 1 pinch of sea salt I like fleur de sel
  • 1-2 tablespoons water for blending

Instructions
 

  • Food processor with crushed almonds.
    Almonds: Add the almonds to a food processor and blitz until roughly crushed.
  • Blended energy balls mixture in a food processor.
    Blend: Add the Medjool dates, oats, almond butter, vanilla extract, salt, and 1 tablespoon of water to the food processor. Blend until well combined. Add more water (1 tablespoon at a time) if needed.
  • Hand holding a rolled energy ball.
    Shape: Roll about 1 tablespoon of mixture into a ball. Repeat with the rest of the mixture.
  • Glass container with 15 energy balls closed with a see-through lid.
    Store: Transfer the energy balls to an airtight container or reusable zip bag and store them in the refrigerator for up to 1 week.

Notes

  1. If the Medjool dates are a little stiff, soak them in warm water for 10 minutes. Drain before adding them to the food processor.
  2. I really recommend using Medjool dates for their flavor and texture. If needed, you can replace them with smaller, light-brown dates but make sure to soak them in warm water as they are stiffer, and weigh the right amount using a scale as they are a lot smaller than Medjool dates.
  3. You can replace the almonds and almond butter with any nuts or nut butter you like.
