Canned white beans


Ripe tomatoes

Sun-dried tomatoes in oil

Step 1

Wash, the tomatoes, remove the white core, and prick them with a fork.

Step 2

Add the beans, sun-dried tomatoes, and water to a baking dish.

Step 3

Add in the tomatoes upside down. Cover with aluminum foil and roast at 400°F (200°C).

Step 4

Remove the foil and mash the tomatoes with a fork. Roast for 10 more minutes.

Step 5

Add everything to a bowl if using an immersion blender or to a high-speed blender jug.

Step 6

Blend until perfectly smooth.
