Easy Baked Oats For One

These baked oats for one are made in single-serving ramekins and make an easy and nutritious breakfast. This recipe is vegan, egg-free and gluten-free.

Equipment

  • 1 Kitchen scale or measuring cups and spoons
  • 1 Food processor or mixing bowl
  • 1 Single-serving ramekin

Ingredients 

Dry ingredients

  • ½ cup (60 g) gluten-free oats or oat flour
  • 1 teaspoon flaxseeds or flaxseed meal
  • teaspoon baking soda
  • pinch of salt

Wet ingredients

  • ½ (40 g) banana
  • 2 teaspoons almond butter
  • 1 teaspoon maple syrup
  • ¼ cup milk

Add-ins

  • 1 handful chocolate chips

Instructions

  • If baking the oats in the oven (rather than in the microwave), preheat the oven to 350°F (180°C).
  • Add all the ingredients, except the chocolate chips to a small blender and blend until combined. Alternatively, mash the banana with a fork and combine everything in a mixing bowl.
  • Pour the oat mixture into a greased ramekin.
  • Bake for 20-25 minutes at 350°F (180°C) or microwave on high for 3 minutes.
