Champagne Cocktail With Elderflower Syrup

This champagne cocktail with elderflower syrup is delightful and elegant at the same time. It makes the perfect holiday cocktail.

Ingredients
 

  • ½ oz (15 ml) elderflower syrup 3 teaspoons
  • 1 oz (30 ml) pomegranate juice from 1 fresh pomegranate 2 tablespoons
  • 4 ounces (120 ml) chilled brut champagne ½ cup
  • 1 sprig of fresh thyme for garnish

Instructions
 

  • Cut the pomegranate in half. Remove the seeds and add them to a blender. Strain the juice through a fine-mesh sieve two times to remove all the bits and pieces. Use a nut milk bag if you have one.
  • Pour the elderflower syrup and pomegranate juice into a coupe glass. Gently spin the glass to mix the two liquids.
  • Top with champagne and give it a gentle stir.
  • Garnish with a sprig of thyme.

Notes

  • Elderflower syrup is also known as elderflower cordial.
  • You can also use store-bought 100% pomegranate juice without additives or added sweeteners for this cocktail. You may also find it as pomegranate juice concentrate.
  • You can substitute the champagne with prosecco or cava.
  • I tried juicing the pomegranate with an electric citrus juicer (just like you would juice an orange) but the juice turned out to be very bitter because of the white skins that got juiced, too.
