This gingerbread in a mug is perfectly moist and gooey and comes together in less than 10 minutes. It's the perfect single-serve dessert for the holiday season.
Combine the oat flour, gingerbread spice mix, baking soda and salt in a small bowl (not the cup you'll bake the mug cake in).
Add the applesauce, milk, almond butter and maple syrup to the bowl. Whisk until well combined.
Transfer the batter to a microwave-safe mug.
Microwave for 1 minute and 10 to 30 seconds. I found the 1 minute and 20 seconds at 700W were perfect in my microwave.
Optionally add toppings and enjoy right away.

If you don't have a ready-to-use gingerbread spice mix, add ½ teaspoon ground cinnamon, ¼ teaspoon ground ginger and ⅛ teaspoon nutmeg to the dry ingredients.
Use a kid's applesauce pouch if you don't want to open a big jar of applesauce. make sure it's 100% apples, though.
Weight the ingredients if you have a scale. Small weight differences can have a big impact on such small-scale recipes.
Make the batter in a transparent bowl rather than the cup you'll bake it in. You'll be able to see through and make sure everything is well combined.
Microwave time may vary depending on the wattage of your microwave. Start with one minute if your microwave has a higher wattage (> 800W). Insert a toothpick in the center. If it comes out clean, your mug cake is done. If not, microwave again at 10-15 seconds intervals. Note that as it's a vegan mug cake, it will slightly deflate and that the top may still be a little sticky.
