Step 1

Cut the vegetables. Mince the shallots and the garlic.

Step 2

Heat a large pan with olive oil. Sauté the shallots and garlic until translucent.

Add the cherry tomatoes and the sun-dried tomatoes.

Let them cook over medium heat until they fall apart.

Deglaze with vodka. Give it a good stir and let it simmer for at least 5 minutes.

Add the cashew butter and the vegetable broth to the pan.
