Step 1

Mince the onion. Peel and cut the potatoes into 1-inch chunks.

Step 2

Sauté the onion for 3-4 minutes over medium-high heat soft.

Step 3

Sauté the potatoes to caramelize them just so slightly.

Step 4

Pour in the vegetable broth. Stir and cover it with a lid.

Step 5

Simmer for 20 minutes over medium heat or until the potatoes are tender.

Step 6

Mash the potatoes with a potato masher. Add more broth if needed.
