Mince the onion.
Peel and cut the potatoes into 1-inch chunks.

Sauté the onion
for 3-4 minutes over medium-high heat soft.

Sauté the potatoes
to caramelize them just so slightly.

Pour in the vegetable broth.
Stir and cover it with a lid.

Simmer for 20 minutes
over medium heat or until the potatoes are tender.

Mash the potatoes
with a potato masher. Add more broth if needed.
