Step 1

Add the mixed nuts to a food processor. Pulse several times until crushed.

Step 2

Blend the lentils, oats, flax seeds, vegetable broth and spices in the food processor.

Step 3

Sauté the chopped onion, carrots, celery and mushrooms.

Step 4

Mix the cooked vegetables, crushed nuts and lentil mixture.

Step 5

Spoon the mixture into a prepared loaf pan lined with parchment paper.

Step 6

Bake the loaf for 50 minutes at 350°F (180°C). Let it cool completely before slicing.
