Vegetable broth

Canned lentils

Step 1

Add the mixed nuts to a food processor. Pulse several times.

Step 2

Add the lentils, oats, flax seeds, vegetable broth and spices to the food processor.

Step 3

Blend. The mixture doesn't have to be perfectly smooth.

Step 4

In a bowl, combine the crushed nuts with the lentil mixture. Set aside.

Step 5

Mince the onion, carrots, celery and mushrooms. I like to use the food processor to do so.

Step 6

Heat the pan and sauté the vegetables for 5 to 7 minutes over medium-high heat.

Step 7

Add the cooked vegetables to the mixing bowl with the nut mixture.

Step 8

Spoon the mixture into a parchment-lined loaf pan.

Step 9

Bake the loaf for 50 minutes at 350°F (180°C).
