Add the
mixed nuts
to a food processor. Pulse several times.

Add the lentils, oats,
flax seeds, vegetable broth and spices to the food processor.

Blend.
The mixture doesn't have to be perfectly smooth.

In a bowl,
combine
the crushed nuts with the lentil mixture. Set aside.

Mince
the onion, carrots, celery and mushrooms. I like to use the food processor to do so.

Heat the pan
and sauté the vegetables for 5 to 7 minutes over medium-high heat.

Add the cooked vegetables
to the mixing bowl with the nut mixture.

Step 8
Spoon the mixture
into a parchment-lined loaf pan.

Bake the loaf
for 50 minutes at 350°F (180°C).
