Lemon Poppy Seed Muffins

Step 1

Make the flax egg by mixing the flaxseed meal with water.

Step 2

Whisk the oat flour with the almond flour, arrowroot powder and baking soda.

Step 3

Form a well in the center of the dry ingredients and add in the wet ingredients.

Step 4

Stir in the poppy seeds without overmixing the batter

Step 5

Bake the muffins in the preheated oven (350°F/180°C) for 22 minutes.

These lemon muffins make a great snack or dessert!
