Roasted Brussels Sprouts & Vegan Caesar Dressing

Wash the Brussels sprouts thoroughly in a colander.

Cut them in half. Toss with olive oil, coarse sea salt and black pepper.

Transfer to a baking sheet and arrange them in a single layer.

Roast the Brussels sprouts for 20 to 25 minutes.

Dressing ingredients

Salt

Small capers + their brine

Mustard

Step 1

Add the dressing ingredients to a small blender.

Step 2

Blend until creamy. Adjust seasoning if necessary.

Step 3

Serve over the warm or cooled Brussels sprouts.
