Tomato paste

Step 1

Very finely chop the onion and the carrots.

Step 2

Sauté the onion and carrots in a Dutch oven with olive oil.

Step 3

Add in the tomato paste and spices.

Step 4

Add in the soy mince, tamari, red wine, and water. Cook for 10 minutes.

Step 5

Add the tomato puree and bay leaf and let simmer for 20 minutes.

Step 6

Adjust seasoning with salt and pepper if needed.

It's the closest you can get to a traditional Bolognese in both taste and texture!
