Easy Artichoke Pasta Bake

Canned artichoke hearts

Step 1

Soak the cashews in boiling water for 30 minutes to 2 hours

Step 2

Drain the cashews and add them to a blender with the vegetable broth and spices.

Step 3

Blend on high until perfectly creamy.

Step 4

Drain the canned artichokes.

Step 5

Cut them in half or into quarters.

Step 6

Add the pre-cooked pasta, artichoke hearts and cashew sauce to an oven-proof dish .

Step 2

Blend cashews until finely ground. Add Italian seasoning  and a pinch of sea salt.

Step 7

Sprinkle the ground cashews onto the pasta and bake for 15 minutes on grill mode.
