Step 1

Rinse and cook the millet according to package directions.

Step 2

Let the millet cool down completely. Then, fluff it with a fork to separate the grains.

Step 3

Seed the pomegranate and chop the veggies.

Step 4

Chop the herbs with a knife or a food chopper. Make sure to remove the thick stems.

Step 5

Combine the garlic, lemon juice, olive oil, salt, and chopped herbs.

Step 6

Toss in the millet, cucumbers , green onions, and pomegranate seeds.

Perfect as a light lunch or summery side dish!
