Step 1

Wash the cabbage and chop it into small pieces.

Step 2

Dice the onion and cut the carrots and celery into bite-size pieces.

Step 3

Heat a stock pot or a Dutch oven with olive oil and add the sun-dried tomatoes.

Step 4

Add the onion and sauté until translucent.

Step 5

Add the vegetables, vegetable broth, chili paste and spices to the pot.

Step 6

Simmer for 30 minutes or until they carrots are tender.

Meal-prep this soup for dinner next week!
