Easy No-Bake Lemon Cookies

Lemon juice

Gluten-free oats



Chopped almonds

Maple syrup

Coconut oil

Step 1

Blend the oats and cashew nuts in a blender or food processor.

Step 2

Pulse until you obtain a fine powder.

Step 3

Add the lemon juice, lemon zest, maple syrup and coconut oil to the blender.

Step 4

Blend until combined. The mixture will be pretty wet.

Step 5

Let the mixture rest. It will thicken within 5 minutes.

Step 6

Stir in the crushed almonds for some bite.

Step 7

Take about 1 heaped teaspoon of cookie dough and roll it into a ball.

Step 8

Press the balls flat with your hands until they look like a little cookies.

Store them in the fridge and enjoy as a snack!
