Lentil Spaghetti Bolognese

Step 1

 Wash and peel the vegetables. Cut them into large pieces.

Step 2

Chop the onion, shallots and garlic in a food chopper, food processor or high-speed blender.

Step 3

Chop the carrots and the zucchini in your blender/food chopper as well (or by hand).

Step 4

Sauté the onion, shallots and garlic over medium heat.

Step 5

Add the chopped veggies to the pan. Sauté them for 5 minutes with a lid on.

Step 6

Add in the pureed tomatoes. Cover with a lid and simmer for 10 minutes.

Step 7

In the meantime, cook the pasta according to package directions.

Step 8

Drain and rinse a can of brown lentils.

Step 9

Add the lentils and spices to the sauce. Give it a good stir.
