Best Lentil Salad

Green lentils

Sun-dried tomatoes



Jarred red peppers

Cherry tomatoes

Basil & parsley

Olive oil

Red wine vinegar

Step 1

Rinse the lentils in a fine-mesh sieve under cold water.

Step 2

Add the lentils to a saucepan with 2.5 times the volume of water, salt, and a bay leaf.

Step 3

Cook the lentils at a gentle simmer for 20-30 minutes.

Step 4

Wash and cut the cherry tomatoes and cucumber.

Step 5

Finely chop the parsley and basil. Add in the olive oil, vinegar, salt, and garlic.

Step 6

Add the cooled lentils, veggies, red peppers, and sun-dried tomatoes to a large bowl.

Step 7

Toss with the dressing. Garnish with pistachios and fresh herbs if you'd like.

It makes a great make-ahead lunch. Try it out this week!
