Step 1

Rinse the quinoa in a fine-mesh sieve to remove dust and debris.

Step 2

Soak the quinoa in cold water for at least 2 hours.

Step 3

Drain and rinse the quinoa. Add it to a powerful blender with exactly 1 cup of water and salt.

Step 4

Blend until perfectly smooth (about 2 minutes).

Step 5

Cook the tortillas. Spread it out thinly and make sure your pan is really hot when you start out.

Step 6

Flip the tortilla once the edges start to lift and the center is set. Cook it for another minute.
