Falafel mix

Step 1

Add water to your falafel mix. Let it sit while you prep the rest.

Step 2

Cook the millet (can sub quinoa or couscous) according to package directions.

Step 3

Wash and cut your veggies into bite-sized pieces.

Step 4

Roast in a pre-heated oven for 25 minutes until slightly golden.

Step 5

Make the chimichurri dressing by mixing the parsley with olive oil and vinegar.

Step 6

Cook the falafels in a pan with a little oil until crispy.

Step 7

Assemble your bowl and top with pickled onions (if desired). Enjoy warm or cold.

Makes a great vegan lunch or dinner.
