Grated carrots

Ingredients

Coconut flakes

All spice Cinnamon

Gluten-free oats

Step 1

Grate the carrots with a hand grater or the grater blade of your food processor

Step 2

Add the almonds, half the oats and the shredded coconut to your food processor.

Step 3

Blend until finely ground. Make sure there are no big almonds chunks left.

Step 4

Add in the grated carrots and remaining ingredients. Pulse to combine.

Step 5

Add in the remaining oats and pulse a few more times.

Step 6

Press 1 tablespoon of dough in the palm of your hands. Don't roll them or they will fall apart.

It's the perfect snack to keep in the fridge!
