Step 1
Cut the butternut squash i
n half and remove the seeds. Rub it with oil or water.

Place the squash cut-side down
on a baking sheet and wrap an onion in foil.

Roast the squash and the onion
for 45 minutes or until tender.

Peel the squash
and cut it into pieces. Cut the onion in half. Add them to a blender with broth.
