Butternut Squash Soup Recipe

Step 1

Cut the butternut squash in half and remove the seeds. Rub it with oil or water.

Step 2

Place the squash cut-side down on a baking sheet and wrap an onion in foil.

Step 3

Roast the squash and the onion for 45 minutes or until tender.

Step 4

Peel the squash and cut it into pieces. Cut the onion in half. Add them to a blender with broth.

Step 5

Blend the soup in a high-speed blender or with an immersion blender.
