This homemade carrot and nectarine juice is the ultimate summer juice recipe. The carrot balances out the sweetness of the orange and nectarine for a really simple yet delicious juice. I highly recommend serving it over ice.

Key ingredients
- Carrots: You'll need 3-4 medium-sized carrots for 1 large glass of juice. You don't need to peel the carrots if they are organic and properly washed (preferably with baking soda and vinegar).
- Nectarines: Choose firm nectarines for juicing. Overripe nectarines tend to be a little mushy and don't get juiced as easily.
- Orange: Improves the overall taste of the juice and adds some natural sweetness.
Elo's tips
- Add olive oil to your juice to promote the absorption of fat-soluble vitamins.
- Use a milk frother. Since oil and water (in this case juice) don't mix, I recommend stirring the olive oil into the juice with a handheld milk frother. Alternatively, you can use an immersion blender in a high-rise container to avoid splashes.
- Save the juice pulp to make juice pulp waffles. You can also make juice pulp muffins, juice pulp energy balls, or juice pulp popsicles–all the recipes are provided in my juicing eBook.
Elo's Trusted Juicer
I'm using the compact easy-clean Hurom H310A slow juicer which is incredible for juicing and provides a really dry juice pulp (great for juice pulp recipes).
How to make this summer juice
STEP 1: Cut the fruits and veggies. Optionally peel the carrots and cut them into pieces that fit into your juicer. Remove the pit of the nectarines. Peel the orange.
STEP 2: Juice. Add the carrots, nectarines, and orange into the hopper/feeding tube of your juicer. Turn it on.
STEP 3: Strain. Optionally run the juice through a fine-mesh sieve to remove any bits and pieces. You can also place a fine-mesh strainer on top of the recipient collecting the juice.
STEP 4: Serve. Pour the juice over 3-4 ice cubes to make it extra refreshing. I also find that this juice tastes best cold.
